back to work

waking up today was hard.

the past 11 days, I've gotten to sleep in, hang out with my hubs, cook yummy foods, mark things off my to-do list, meet with friends, etc.
today, I was reminded that I have to wake up early, follow a detox plan, go to work, and more ewie stuff! I make a much better housewife ;).
OH! And, no coffee... ugh I'm strugglin' here.
oh, well. back to reality. I am truly blessed to have had off 11 days,
so I should quit my whining, huh?

either way, we started the detox last night
so far, super sleepy but feel content hunger wise
after last night's dinner, I am really excited about the recipes we will be making

breakfast this morning
antioxidant smoothie
2 cups mixed frozen berries (9 ounces)
1 cup unsweetened pomegranate juice
Combine berries, juice, and 1 cup water in a blender; blend until smooth.

last night's dinner - D-LISH!
roasted peppers, cauliflower & almonds
this is one of the quickest and most delicious meals we've ever made.
it took 25 minutes total, including prep time (and we were able to make today's lunch while it cooked)
you'll need:
1 red bell pepper, quartered and seeds removed
1/2 head cauliflower, cut into florets (I used a bag of frozen cauliflower)
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
1 tablespoon fresh lemon juice
1/4 cup Kalamata olives
1/4 cup toasted slivered almonds
1/4 cup fresh parsley leaves

heat oven to 425 degrees
on a rimmed baking sheet, drizzle red pepper slices and cauliflower florets with 2 tablespoons oil and season with salt and pepper
 roast until golden and tender, 18 to 20 minutes
in a bowl, whisk together remaining 2 tablespoons oil and lemon juice
season with salt and pepper
 arrange roasted red peppers and cauliflower on a platter
top with olives, almonds, and parsley
drizzle with dressing
eat up. yum.yum. yum.
